This feijoa jam tastes delicious with blue cheese on crackers.
1kg feijoas peeled and sliced
4 C sugar
Place feijoas in a jam pan or a large wide saucepan. Add 1/2 cup water and the juice and zest of one lemon. Bring the mixture to boil over a medium heat and cook until the fruit is soft.
Add 4 cups of sugar and stir until dissolved. Bring to the boil without stirring for 20mins or until the mixture reaches setting point.
Pour into warmed sterilised jam jars, cool, and seal.
