1 tbsp runny honey
2-3 stalks of celery finely chopped
1/4 cup raisins
bunch of mint and/or parsley chopped
Grate carrots and beetroot using handheld grater or food processor with grater attachment. Add the zest of an orange, raisins, celery and mint and/or parsley.
Squeeze orange juice over salad. Pour honey and drizzle some olive oil over. Add a little bit of salt and pepper and mix all together.
