Tomato relish

This is another old recipe that one of our team makes every year (the relish is pictured in the jars at the front - plum sauce in the bottles at the back). Because it's old, the quantities aren't in metrics! And it probably has more sugar than we like these days. We've kept the original recipe and added in the conversions for you. We suggest adjusting the sugar to suit your taste. 



3 lbs (1.3kg) tomatoes
4 large onions
1 lb (500gm) sugar
1 pint (470ml) malt vinegar
1/2 tbsp mustard
1/2 tbsp curry powder
1 dstp salt


Chop onions and tomatoes into small pieces and boil all together for 1 -2 hours until reduced and dark red. Then pour the relish into hot sterilised jars.
