Broad Bean Salad
This tasty salad is a perfect side dish to serve with meat or simply eat on it's own.
2 handfuls of podded peas
2 handfuls of podded broad beans
1 handful of mint
1 lemon
Salt and pepper
Bring a pot of water to the boil, add peas and boil for three to four minutes. Remove the peas with a slotted spoon and put in cold water.
Then add broad beans to the boiling water and boil for three to four minutes. Remove the beans with a slotted spoon, put in cold water and slip off the outer gray skins.
Drain the water and put all the peas and broadbeans in a bowl with a small bunch of fresh, chopped mint.
Drizzle over some good quality oil and juice of one lemon, plus salt and pepper.
Mix altogether.
