Feijoa Cake

This is a delicious feijoa cake recipe. When feijoas are out of season you can substitute with pears or apples.

150gm butter

1 1/2 C sugar

4 eggs

2 C self-raising flour

2 C coconut

1 tsp baking powder

1 C milk

1 tsp vanilla essence

6-8 fresh feijoas

Preheat the oven to 180 degrees celcius. Then grease and line a 25cm round cake tin. Cream the butter and sugar together in a mixer. Add the eggs one at a time and beat until they're all mixed in.

Fold in the remaining ingredients except the feijoas. Be careful not to over mix. Then pour half the mixture into the cake tin.

Skin and slice the feijoas and place them on top of the mixture already in the tin. Then pour the remaining mixture over the top.

Put the tin in the oven and cook for 1-1 1/2 hours. Insert a skewer to check and if it comes out clean the cake is cooked. Cool the cake in the tin and then turn it out on to a rack. Sprinkle the top of the cake with icing sugar when serving.
