Passionfruit Curd
Who doesn't love a good curd. This recipe is not only easy but it packed with flavour and will no doubt become a favourite in your household.
4 egg yolks
125g butter
180-220g passionfruit (roughly 15-18 passionfruit)
3/4 cup of sugar
Out everything into a sauce pan and mix on a medium heat for 10 - 15mins until the mixture thickens.
Put mixture into sterilised glass jar and chill in the fridge for an hour.
This passionfruit curd is a great addition to a tart, or on top of vanilla ice-cream or just a dollop on some greek yoghurt.
