Zucchini Brownies

With Zucchini going crazy at the moment, we bet you are looking for ways to use them up. Why not try this delicious Zucchini Brownie recipe! It has a vegetable in it which makes it healthy... Kind of.

2 cups of flour

1/2 cup of cocoa powder

1 1/2 teaspoons baking soda

1 teaspoon of salt

1/2 cup of vegetable oil

1 cup of sugar (can use honey if you prefer)

2 teaspoons of vanilla essence

2 cups of zucchini (shredded)

3-5 tablespoons of water (if needed)

1/2 cup of walnuts (optional)

Pinch of chilli powder (optional)

Preheat your oven to 180 degrees on fan bake. Line or oil a baking pan.

In a medium bowl mix all your dry ingredients; flour, cocoa, baking soda and salt. In a separate bowl using an electric mixer, mix the oil, sugar and vanilla essence together until combined.

Add your flour mixture to the wet ingredients and stir well. Fold in the zucchini and let the mixture stand for about 5 minutes so that the moisture from the zucchini can be absorbed. The mixture is quite thick if you notice that it's still a bit crumbly add 1 tablespoon of water at a time until the mixture resembles a cookie dough texture.

Spread into your prepared pan and bake for about 25-30 minutes. You know it's done when the brownies spring back when touched lightly.

You can add some walnuts to this mixture or a bit of chilli powder if you like a bit of a kick!
