Zucchini Relish
Got a stack of zucchinis or peppers in your vege garden? Here's a great tasting relish recipe to make use of your veges.
10 C zucchini (courgette)
3 C onions
4 red capsicum
5 tbs salt
3 C sugar
1 tbs cornstarch
1 tsp turmeric
3 C vingear
1 tsp dry mustard
1 tsp coarse black pepper
1 tsp celery seeds
Grate zucchini into a food processor then add onion and red capsicum to the food processor and mix. Put the vegetables in a large bowl, add salt and let stand overnight.
In the next morning rinse the veges and drain well.
Place the veges in a large pan and add the remaining ingredients. Mix well and boil for about half an hour. Then pack and seal in hot steralised jars.
