Tomato and Red Onion Bruschetta
The combination of tomato and red onion on bruschetta (roasted bread) is a tasty and health snack or appetiser.
Cherry tomatoes
Red onion
Sourdough or baguette
Olive oil
Garlic
Basil leaves
Red wine vinegar
Sea salt
Black pepper
Cut the sourdough bread or baguette into slices and brush both sides with olive oil.
Grill for about two minutes per side, until browned but still soft inside. Rub one side of the bread with garlic.
Cut cherry tomatoes in half and combine with red onion, basil leaves and red wine vinegar. Strain mixture so it's not too watery.
Divide the mixture between the bread slices (garlic side up) and garnish with extra basil leaves, a little olive oil, sea salt and black pepper. And, eat immediately!
